I tried the original recipe (found at Cube Steak Casserole), but it really lacked something. We had dinner with my sister the week before, and she made a similar dish without the meat. So, next time here is the recipe I will try. It is a combination of the two. Just to clarify. . .I haven't tried this version, yet. I think it will be ok based on my last attempt and my sister's recipe. If not, you'll see an update!
Cheap Steak Casserole
- 4-6 cube steaks (Some kind of cheap beef, I actually used something else that needed to leave my freezer.)
- 1 packet dry onion soup mix
- 1 can cream of mushroom soup
- 1 large can of mushrooms (You can use fresh, just cook them before adding to the casserole.)
- 1/2 large onion (or one small)
- 1/2 cup of sour cream
- 1 can water
- 1 c. Minute rice (brown or white, I used brown)
- 1 stick of butter
- flour, salt & pepper
- olive oil
Chop the steak into small, bite size pieces. Mix
flour, salt & pepper. Dredge cube steaks through flour. Brown cube
steak bites on both sides in a skillet of hot oil. Remove the steak bites. Cook the onion in the same pan, adding oil if needed. If using fresh mushrooms, cook them now, also. Transfer cube steaks, onion, and mushrooms to a
9x13 baking dish. Mix soups, sour cream, and water and pour over steak mixture.
Sprinkle rice over all and cover with pats of butter. Cover
with foil & bake at 350 degrees for 1 hour.
